Made from vegetables, meat and chili peppers, mole de olla is a flavorful broth, typical of central Mexico. Keep reading and we tell you what you need to prepare it, you will love it!
To prepare the mole de olla you need the following ingredients:
1 kilo of meat for stew (2 lb)
¼ cup oil
3 bay leaves
1 tablespoon of sea salt
2 tablespoons canola oil
½ cup sesame seeds
2 roma tomatoes
3 ancho chili peppers (soaked)
4 arbol chiles (soaked)
2 cups green beans
¾ cup chopped coriander

In a skillet over medium-high heat, add the oil and sauté the tomatoes, green tomatillos, and sesame seeds for 10 minutes. Stir occasionally.When ready, add the mixture of tomatoes, green tomatillos and sesame along with the previously soaked arbol chiles and ancho chiles to the blender. Blend until the ingredients are integrated In a saucepan over medium-high heat, add 1/4 cup of oil and add the meat, the onion, chopped into pieces, the bay leaves and the salt. Stir and cook for 5 minutes, then cover with water, cover the pot and simmer for 1 hour.
When the hour is up, remove the onion and add the tomato and chili mixture. Mix well, add the corn chunks, diced potato, green beans, chopped zucchini and cover the pot again. Cook over low heat for 25 minutes, serve and garnish with finely chopped onion, coriander and lemon juice to taste.
